Vegan, Gluten-Free, and (mostly) Sugar- Free

Hey everyone! I thought I would jump on here today to share my go-to easy granola recipe that I’ve been making for the last few months. It’s seriously so yummy! Not to sweet, lots of crunch, and pairs well with all sorts of different dishes (yogurt, oatmeal, pudding, or even just on its own as a snack or with some non-dairy milk). Plus it’s totally vegan and can be made gluten-free and mostly sugar free too if you’d like. All the mix-ins are optional so if you don’t like something, take it out! Or if you really love something else, add more in! Granola can be whatever you want it to be. Anyway, I don’t want to waffle on to much as I’m sure you just want to get to the recipe! So here goes:

Ingredients
- 1.5 Cups Gluten Free Rolled Oats
- .5 Cups Unsweetened Shredded Coconut
- .25 Cups Raw Pumpkin Seeds
- .25 Cups Raw Mixed Nuts
- 1/4 Cups Raw Cocoa Nibs
- 2 TBSPs Sugar Free Maple Syrup ( I use Pyrue organics)
- 1 TBSPs Sesame Seeds
- 1 TBSPs Ground Flax Seed
- Cinnamon and/or Pumpkin pie spice to taste
- 1/4 Cups Dried Fruit ( I use raisins and cranberries)
Instructions
- Preheat Oven to 375 degrees (F)
- Line a baking sheet with parchment paper
- Mix all the ingredients except to dried fruit together in a large mixing bowl
- Spread the uncooked granola onto the baking sheet and cook for 10 minutes
- Remove from oven and stir
- Place back in the over and cook for an additional 3-5 minutes depending on your oven and how crisp you like it
- Once its golden brown, remove from the oven and let it cool on the baking sheet
- Add in your dried fruit and then place it in an air tight container
- Enjoy!
